Our natural freezer jam story.

How is freezer jam different than all the other jams available from local stores?
To preserve jams it is easiest to cook them and add a lot of sugar. Some jams may be boiled more than once. These high temperatures tend to destroy the fresh flavour and aroma, natural texture, bright colour and nutritional value of the fruit in cooked jams.
Wild Goose Freezer Jams do not use boiling, excess sugar or preservatives. Instead, we use sun-ripened fruit combined with natural pectin and organic evaporated cane juice to make a stunning jam that tastes like fresh fruit. In order to maintain the taste and nutrition, we freeze our jam. Consequently, Wild Goose Freezer Jam will taste as fresh as the day it was picked, even after a year in the freezer. Now that's worth a trip to the freezer section!

How sweet is it?
Wild Goose Freezer Jam uses about half of the sugar found in most conventional jams. In fact, Wild Goose Freezer Jam has less sugar and carbohydrates per serving than "sugar-free" jams/spreads that use grape or apple juice concentrate.

Do you have flavours other than strawberry?
We have developed an even lower sugar version of our locally grown strawberry freezer jam for restaurant use where it can form the foundation for a tarter fruit sensation. In addition a no-sugar version of the local strawberries is now available and proving to be a big hit for certain customers. In addition, in March of 2011 we launched two more amazing flavours: a raspberry as well as a wild blueberry freezer jam. To all those raspberry/blueberry fans out there; we have heard your cries!

Is the low sugar version available for retail sale?
Although Wild Goose Strawberry Freezer Jam is already lower in sugar than most conventional jams, we do offer a "no sugar" product for those seeking to reduce their sugar intake. In addition, the restaurant topping is midway "sugar-wise" between our original strawberry jam and the no sugar strawberry varieties available in containers for retail.

Why do you call it a jam? It's more like a 'topping'.
Because we use pectin, we are required by law to label our products as a 'jam'. Pectin is a natural component of many fruits and is added to our product to make it consistently thick. Wild Goose uses a natural fruit pectin obtained from apples. The soft set and fresh flavour make it more like a fruit topping than a cooked jelly or jam.
But don't let the name fool you. Wild Goose Freezer Jam is equally at home in yogourt and smoothies, or on top of waffles, ice cream and fancy desserts as it is on bread!

Do you actually make all of the jam in your own home?
No, the jam is actually made in a commercial kitchen-they have much bigger bowls than I do! But all of the tests and variations (too numerous to count) were done in my kitchen. Although we have been making strawberry freezer jam for years for our own family, it actually took us many tries to get it right for commercial sale. However, it is all worth it (stained walls and all), when I see the surprised and delighted faces of customers trying Wild Goose Strawberry Freezer Jam for the first time!

How did "Wild Goose" get its name? There aren't any geese in it... are there?
Don't worry, Wild Goose Freezer Jam is 100% vegan, vegetarian, and completely free of any geese. (Whew.)

Monica Chase, the founder of Wild Goose, seems to have a habit of embarking on, shall we say, rather large endeavours. Starting from a recipe that she used for her own family in the small town of Dundas, and hoping to make an astounding product for all Canadians to enjoy, ...well, it seemed rather far fetched, even for her. To make a long story short, it seemed to be a Wild Goose "Chase". The name stuck, and here we are.
