"Wild Goose" was founded by Monica Chase in 2009. After completing her Ph.D. in the sciences, and working in the pharmaceutical sector, Monica decided to take some time off to raise her two children. With a couple of hours to spare each week, she decided to start a small company making freezer jam with local Ontario strawberries. Although Monica had been making freezer jam for her family for years, developing a new commercial recipe brought new challenges and required many additional trials in her kitchen. The new freezer jam she developed for the retail market turned out to be even better than her own homemade jam. Wild Goose freezer jam uses organic evaporated cane juice and has less sugar than even naturally sweetened jams.
Needless to say, this small project has taken on a life of its own. With the first sales starting in 2010, Monica has managed to bring Wild Goose Strawberry Freezer Jam to numerous stores in the GTA within the first few months. In addition, she has a delicious restaurant version available, as well recent additions such as raspberry, wild blueberry and a "no sugar" jam. After numerous hours of hulling and transporting thousands of pounds of strawberries, and experimenting with countless recipe variations in her home, Monica's only regret is having painted her kitchen walls white.
There is a legend that strawberries were named in the nineteenth-century by English children who picked the fruit, strung them on grass straws and sold them as "Straws of berries". Another theory is the name was derived from the nineteenth-century practice (ands still today, although most farms use raised beds, enclosed in plastic) of placing straw around the growing berry plants to protect the ripening fruit. But the most widely held view is that the name Strawberry was derived from the berries that are "strewn" about on the plants, and the name "strewn berry" eventually morphed into "Strawberry".
